Lately my fascination with avocados has taken a leap and now I can't go 2 days without having one. Pretty sad... but it's pretty darn good too! Good thing it's not cheetos or ice cream that I've been having a craving on lately...
Anyway, I've been on a quest to save money in whatever way that I can and one of the first things to do on my list was to always pack for lunch. With the hospital charging high for sub par meals, packing lunch saves me quite a lot of money.
I've been making Avocado con Hielo, a Filipino dessert, the night before and packing it as a lunch time dessert if I were to bring a Filipino meal for lunch. I loved it the first time I made it that I made this dessert three days in a row for lunch!
The recipe is as follows:
Ingredients:
2 1/2 tablespoons of Nido or any powdered milk
2 1/2 tablespoons of castor sugar
1 avocado
There's only one direction.... and that's to mix, mix mix!!! I usually place in a canning jar and refrigerate overnight, and make sure you have a insulated lunch box to carry it in to work! It tastes just as fresh the next day for lunch as when you just made it.
It was my dad's awesome and hearty chicken halang halang with lots of ginger, carrots, and green onions. Yummm. Happy lunching! :)
